Start with fresh herbs1.1 Put the herbs in a bowl with a small amount of salt.2.
Take out the stems, cut off the outer layer and discard the inner layer.3.
Heat a large pot over a medium-high heat, add the olive oil and cook the herbs for about 10 minutes, stirring frequently, until they soften.
Remove them to a bowl of cool water and drain.4.
In a small bowl, mix the lemon juice, salt and pepper, adding the dried herbs to the mixture.5.
Add the chopped onions, garlic, ginger and parsley to the vegetable mixture.6.
When the mixture is smooth and fragrant, add half the vinegar and mix well, then add the remaining vinegar.7.
Bring to a boil and cook for about 5 minutes.
Add a few drops of lemon juice to the mix and cook another 5 minutes, until the vinegar is thickened.8.
Add 1 tbsp.
of the lemon vinegar to the lemon mixture, stir and cook until the lemon flavour is gone.9.
Stir in the remaining 1 tbsp of the vinegar, season and serve immediately.
